My family being from Alsace, in northeastern France, spaetzle have always been a staple food for me. I remember perfectly my mom making them from scratch and how delicious they were. This time I decided to make them myself, mostly because I was missing them too much! They are actually very easy to make as the dough doesn't need to be rolled or anything like Italian pasta. You simply need a spaetzle maker which is like a big grater and grate your dough! Once they are cooked, I simply pan fried them in some butter and I devour them!
Here is the recipe:
Ingredients:
400 g flour
4 eggs
1 pinch of salt
80 ml water
Preparation:
1- Beat the eggs and add a pinch of salt.
2- In a large bowl, add in the flour, the beaten eggs and the water, mix until you see bubbles and that the dough is detaching itself from the sides of the bowl. The dough will still be sticky.
3- Boil water and make the spaetzle by using a spaetzle maker. It will grate the sticky dough and create the spaetzle.
4- Once the spaetzle are floating, strain them and put them in cold water. Then strain again and reserve on the side.
5- Cook in butter with some salt and pepper and enjoy!
